4 green peppers
1 lb ground turkey
2 tbsp olive oil
1/2 onion, chopped
8 oz mushrooms, chopped
1 zucchini, chopped
1 cup baby spinach
1 14 oz can chopped tomatoes, drained
1 tbsp tomato paste
salt and pepper
shredded cheese – A cheese like mozzarella is best
Preheat oven to 350.
Boil water in a large pot, enough to cover the green peppers completely. Cut the tops of the peppers off, making sure to not to cut off too much. Chop the excess tops to use later. When the water is boiling, add the green peppers. Cook until slightly soft and bendable. Cooking time varies.
Begin cooking the ground turkey and add the Italian seasoning, garlic powder, salt and pepper to taste. After the turkey is cooked, make sure to drain it.
Chop the onion, mushrooms and zucchini into small pieces. Cook the vegetables together until tender. Mix in cooked turkey, chopped tomatoes and tomato paste. Cook together for a couple minutes, until heated through. Add additional seasonings to taste.
Place the green peppers in a glass baking dish. Take the filling and stuff into the green peppers. Cover with cheese. Bake in oven for about 15 minutes, until cheese is slightly browned and heated through. You can also brown the cheese if not finished in 15 minutes with the broiler.
