Chicken and Vegetable Saute /w Bacon

Hey, its a kitchen clear out recipe right before PAX. It’s gonna be good. Plus it has bacon. Probably gonna need to be edited for changes and stuff.


4 boneless chicken thighs
1/2 lb bacon, chopped
2 tbsp butter
2 leeks, sliced
1 italian sweet pepper, diced
2 zuchinni, chopped
2 cloves garlic, crushed
1/2 cup chicken broth
1 head of broccoli, cut into chunks
12 grape tomatoes, sliced
low sodium soy sauce
salt and pepper, to taste


Dry the chicken with paper towels and season with salt and pepper. Cut up the chicken thighs into big chunks. Get a skillet ready with about 2 tbsp of oil and cook the chicken until browned on the outside and cooked through. Put the cooked chicken to the side when done.

While the chicken is cooking, start the bacon by chopping it and cooking in a cold skillet and warm up until frying. Fully cook the bacon and put on the side to cool.

Clean and cut up the vegetables. Cook the leeks first until slightly golden and soft. Put off to the side and begin cooking the Italian sweet pepper, zucchini and garlic, until slightly browned. Add to the bowl of cooked leeks.Add 1/2 cup of  chicken broth to the pan and bring to a simmer, then add the broccoli. Cover and cook until the broccoli begins to become slightly softer but still crunchy.

Drizzle some soy sauce over the vegetables and add the chicken, bacon, leeks, vegetables and tomatoes back to the pan. Season to taste and you got a meal.
